Russian dressing

Russian dressing is a salad dressing invented in the United States in the late 19th century or early 20th century. Typically piquant, it is today characteristically made of a blend of mayonnaise and ketchup complemented with such additional ingredients as horseradish, pimentos, chives and spices.

History

Some claim that the dressing's name derived from caviar being included as an ingredient. Early recipes sometimes included gelatin or aspic, resulting in a clearer dressing than is typically found today. Modern Thousand Island is a variant of Russian dressing; the British Marie Rose sauce, although similar, is an example of parallel invention.
